Ingrédients
  

  • – 1 lb mini sweet peppers
  • – 8 oz goat cheese or cream cheese softened
  • – 1/2 cup shredded cheddar or mozzarella
  • – 2 tbsp fresh herbs parsley, chives, thyme
  • – 1/2 tsp black pepper
  • – 1/4 tsp garlic powder
  • – 1/4 cup chopped pecans or walnuts optional
  • – 1 tbsp olive oil

Equipment

  • Baking tray, mixing bowl, spoon, paring knife, serving platter.

Method
 

  1. Preheat oven to 400°F (or prep for chilled version).
  2. Slice peppers in half, remove seeds. Place on tray.
  3. Mix cheese, shredded cheese, herbs, garlic, pepper, nuts, and olive oil in bowl.
  4. Fill each pepper half with mixture. Bake 10–12 min or serve chilled.
  5. Garnish with extra herbs and serve on platter.
