Ingredients

Scale

1 cup unsalted butter, softened

1 cup granulated sugar

1 egg

2 teaspoons vanilla extract

2 cups all-purpose flour

2 tablespoons finely crushed Earl Grey tea leaves

1 teaspoon baking powder

½ teaspoon salt

Optional: powdered sugar for dusting

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  • In a bowl, cream the butter and sugar until light and fluffy.

  • Add the egg and vanilla extract. Beat until fully combined.

  • In another bowl, whisk together flour, tea leaves, baking powder, and salt.

  • Gradually mix dry ingredients into the wet mixture until just combined.

  • Scoop tablespoon-sized portions of dough, roll into balls, and place on baking sheet.

  • Flatten each ball gently with your palm or a fork.

  • Bake for 10–12 minutes, or until edges are lightly golden.

  • Cool on tray for 5 minutes, then transfer to a wire rack. Dust with powdered sugar if desired.

Notes

For a stronger flavor, use double bergamot Earl Grey tea

You can also add a light lemon glaze or dip cookies in dark chocolate for a fancy twist.
