Healthy Breakfast Curry

Start your day with this warm, comforting, and nutrient-packed Breakfast Curry. Made with protein-rich chickpeas, fresh spinach, and anti-inflammatory spices like turmeric and cumin, this recipe is perfect for vegetarians, vegans, and anyone craving a flavorful, energizing breakfast.

Ingredients

1 tbsp olive oil

1 onion, finely chopped

2 garlic cloves, minced

1 tsp turmeric

1 tsp cumin seeds

1 cup cooked or canned chickpeas, drained and rinsed

1 cup light coconut milk

2 cups fresh spinach

Salt to taste

Optional: fresh cilantro, lemon juice, or red chili flakes

Instructions

  • Heat olive oil in a skillet over medium heat. Sauté chopped onion and garlic until fragrant (about 3–4 minutes).

  • Add cumin seeds and turmeric, stirring for 30 seconds to release aroma.

  • Add chickpeas and coconut milk. Simmer for 5–7 minutes until slightly thickened.

  • Stir in spinach and cover. Let cook until wilted (2–3 minutes).

  • Season with salt, and garnish with fresh herbs or a splash of lemon juice. Serve hot.
