1/4 cup olive oil
1 chopped onion
5 garlic cloves, grated
2 lbs lean ground beef (93/7)
Salt, pepper, red chili flakes
1/4 cup low sodium soy sauce or coconut aminos
28 oz shredded cabbage or slaw
5 scallions, thinly sliced
Optional: 4 scrambled eggs for extra protein
Heat olive oil in a large skillet over medium heat. Add chopped onion and a pinch of salt. Cook until soft and golden (about 10 minutes).
Add grated garlic and sauté for 30 seconds until fragrant.
Stir in ground beef and cook until mostly browned.
Season with salt, pepper, and chili flakes. Continue cooking for another 10 minutes.
Add shredded cabbage and soy sauce. Cook on medium-high until cabbage wilts.
Top with scallions, cover the skillet, and let them steam briefly.
