Method
- Preheat oven to 375°F (190°C).
- Heat oil in large oven-safe skillet over medium-high heat. Add diced chicken; season with garlic powder, paprika, salt, and pepper. Cook 5–6 min until browned.
- Add diced potatoes to skillet; stir and cook 5 min.
- In a bowl, mix sour cream, milk, and half the cheese. Pour over chicken and potatoes; stir well.
- Top with remaining cheese and bacon (if using). Transfer skillet to oven.
- Bake 15–18 min until potatoes are tender and cheese is bubbly.
- Garnish with green onions and serve hot.
Notes
Use pre-cooked rotisserie chicken for faster prep. Swap in sweet potatoes or add broccoli for variety.
