30-Minute One-Pot Cheesy Potato and Chicken Casserole

Fast, creamy one-pot casserole with chicken, potatoes, and cheese—ready in 30 minutes for an easy, satisfying family dinner!

Ingrédients
  

  • - 1 ½ lbs chicken breast diced
  • - 4 medium russet potatoes diced
  • - 1 tbsp olive oil
  • - 1 tsp garlic powder
  • - ½ tsp paprika
  • - 1 tsp salt
  • - ½ tsp black pepper
  • - 1 ½ cups shredded cheddar cheese
  • - ½ cup sour cream
  • - ½ cup milk or chicken broth
  • - 4 slices bacon cooked and crumbled (optional)
  • - 2 green onions sliced

Equipment

  • Large oven-safe skillet or Dutch oven, cutting board, knife, measuring cups, wooden spoon.

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Heat oil in large oven-safe skillet over medium-high heat. Add diced chicken; season with garlic powder, paprika, salt, and pepper. Cook 5–6 min until browned.
  3. Add diced potatoes to skillet; stir and cook 5 min.
  4. In a bowl, mix sour cream, milk, and half the cheese. Pour over chicken and potatoes; stir well.
  5. Top with remaining cheese and bacon (if using). Transfer skillet to oven.
  6. Bake 15–18 min until potatoes are tender and cheese is bubbly.
  7. Garnish with green onions and serve hot.

Notes

Use pre-cooked rotisserie chicken for faster prep. Swap in sweet potatoes or add broccoli for variety.
