Easy One-Pot Roasted Potato and Sausage Bake

A simple, hearty one-pan dinner featuring golden roasted potatoes, smoky sausage, and colorful peppers. Ready in just 35 minutes with minimal cleanup!

Ingrédients
  

  • 1 lb smoked sausage or kielbasa sliced into 1/2-inch rounds
  • 1.5 lbs red or Yukon gold potatoes cut into 1/2-inch cubes
  • 1 large red bell pepper diced
  • 1 large yellow bell pepper diced
  • 1 medium red onion sliced
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley for garnish optional

Equipment

  • Large sheet pan or baking dish (12x17 inches)
  • Large mixing bowl
  • Sharp knife
  • Cutting board

Method
 

  1. Preheat oven to 400°F. Line a large sheet pan with parchment paper or lightly grease with cooking spray.
  2. In a large bowl, combine sliced sausage, diced potatoes, bell peppers, and red onion.
  3. Drizzle olive oil over the mixture. Add garlic powder, smoked paprika, oregano, basil, salt, and black pepper.
  4. Toss everything together until evenly coated with oil and seasonings.
  5. Spread the mixture in a single layer on the prepared sheet pan, making sure not to overcrowd.
  6. Roast in preheated oven for 30-35 minutes, stirring halfway through, until potatoes are golden and fork-tender.
  7. Remove from oven and let rest for 3-5 minutes. Garnish with fresh parsley if desired.
  8. Serve hot directly from the pan and enjoy!

Notes

For extra crispy potatoes, make sure they're spread in a single layer without overlapping. This recipe stores well for up to 4 days in the fridge and reheats beautifully. Use turkey sausage for a lighter version.
