  • 2 tablespoons melted butter
For the filling:
  • 2 cups cream cheese low-fat recommended
  • 1 cup heavy cream
  • 3/4 cup sugar substitute stevia or erythritol
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat Oven:
  2. Preheat oven to 350°F (175°C).
  3. Prepare the Crust:
  4. Mix almond flour and melted butter in a bowl. Press the mixture evenly into the base of a springform pan. Bake for 10–15 minutes until lightly golden.
  5. Mix the Filling:
  6. In a separate bowl, combine cream cheese, heavy cream, sugar substitute, and vanilla extract. Beat until smooth and creamy.
  7. Assemble & Bake:
  8. Pour the cheesecake mixture over the baked crust. Smooth the top. Bake for 45–50 minutes or until set in the center.
  9. Chill:
  10. Allow the cheesecake to cool to room temperature, then chill in the fridge for at least 4 hours (or overnight) before serving.
